Instructions
Salt the Cucumbers
Place the cut cucumbers in a colander set over a large bowl or in the sink. Sprinkle with kosher salt, toss to combine, and let sit for at least 15 minutes to draw out moisture.
To save time, you can cook the noodles and prepare the dressing while the cucumbers are resting.
Cook the Noodles
While the cucumbers are resting, bring a medium pot of water to a boil over high heat. Cook the noodles according to package instructions until al dente. Drain the noodles in a colander and rinse with cold running water until they are cool to the touch. Leave them in the colander to drain thoroughly.
Rinsing the noodles with cold water stops the cooking process and prevents them from sticking together.
Dress the Cucumbers
Tap the colander of cucumbers against the sink to remove as much excess liquid as possible. Transfer the cucumbers to a large bowl. Add the chili crisp, toasted sesame oil, toasted sesame seeds, sugar, and minced garlic. Toss well to coat the cucumbers evenly with the dressing.
For a more intense flavor, let the dressed cucumbers sit for a few minutes before adding the noodles.
Combine and Serve
Add the well-drained, cooled noodles to the bowl with the dressed cucumbers. Toss everything together until well combined. Taste and adjust seasoning with more chili crisp, sesame oil, or sugar if desired. Serve immediately at room temperature or cold.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Toss again before serving as the cucumbers may release more water.
