- radio_button_unchecked6 eggs, at room temperature
- radio_button_unchecked1/4 cup heavy cream, at room temperature
- radio_button_unchecked2 tablespoons butter, melted
- radio_button_unchecked1 teaspoon vanilla extract
Instructions
Combine Dry Ingredients
In a large bowl, whisk together the almond flour, coconut flour, natural sweetener, salt, baking powder, and optional cinnamon until thoroughly combined.
Whisking the dry ingredients first ensures the baking powder is evenly distributed, which helps the pancakes rise evenly.
Mix the Batter
Slowly whisk in the room-temperature eggs, heavy cream, melted butter, and vanilla extract into the dry ingredients. Continue mixing until the batter is just blended. Be careful not to overmix.
Using room temperature eggs and cream helps the batter mix smoothly and prevents the melted butter from clumping.
Heat the Griddle
Heat a lightly oiled griddle or non-stick skillet over medium-high heat. The griddle is ready when a drop of water sizzles and evaporates on contact.
Use butter or coconut oil for greasing the griddle to add extra flavor and keep the pancakes from sticking.
Cook the Pancakes
Drop batter by large spoonfuls (about 1/4 cup per pancake) onto the hot griddle. Cook for 3 to 4 minutes, or until bubbles form on the surface and the edges appear dry. Flip carefully and cook for another 2 to 3 minutes until the other side is golden brown. Repeat with the remaining batter.
Keto pancakes can be more delicate than traditional ones. A thin, wide spatula will make flipping them much easier.
